Breakfast

Scrambled Eggs with Feta Cheese, Chicken Sausage and Organic Brown Rice

This was a fantastic breakfast. Very energizing and tasty too.


Mid Morning Snack

Avocado Halves with Balsamic Vinegar and Extra Virgin Olive Oil (recipe here)

Spinach Noodle

This spinach noodle contains a healthy dose of vegetable each serving. The recipe is quick and easy, and makes a light lunch.

Dinner

Chicken and Strawberry Salad

This was the perfect salad for summer. It was light, refreshing and sweet. I topped it with poppy seed dressing, made with Greek yogurt, but you can use whatever dressing you like.
