Clean Eating Weight Loss Meal Plan 40

Breakfast

Whole Wheat Toast Topped With Egg Slices

This was a healthy combination of whole wheat and protein. I also added splashes of paprika and herbs to induce flavor. Everything made a tasty clean eating breakfast.






Mid Morning Snack

Philippine Mango

Mangoes are nutritious, with a lot of vitamins and calcium, but they also contain higher sugar level. I wouldn't eat an entire case at a time, but would definitely indulge in a mango once in a while.

Mangoes are in season in the summer, and this Philippine mango was juicy and sweet. It made the perfect clean eating snack.





Lunch

Pear Champagne Salad (recipe here)

I like mixing flavors. How about you?

Today's Pear Champagne Salad was full of flavor: sharp blue cheese and sweet pear, with a splash of tart craisins. Somehow, all ingredients blended well together, and created a delicious salad.

Honey Mustard Baked Chicken (recipe here)

One of my favorite flavors for chicken is honey mustard. It's sweet and tangy, and quite addictive.

Clean Eating Weight Loss Meal Plan 39

Breakfast

Whole Wheat Toast with Goat Cheese and All-Natural Preserves. Banana Slices on the Side

Goat cheese has many healthy benefits: it's easier on the human digestive system; has lower fat, calories and cholesterol; and is rich in protein, calcium, vitamins and other nutrients. It's also spreadable, and works well on toast.  

I struggle with digestive issues, and therefore love using goat cheese as an alternative to cream cheese. I also like goat cheese's sour and tart flavor, which complements the sweetness of the preserves I used.

Today's clean eating breakfast was creamy, sweet and wholesome. As far as clean eating goes, it was on-point. I definitely recommend this to other clean eaters. Hope you like it too.





Mid Morning Snack

Curry Deviled Eggs (get recipe here)

Deviled eggs are protein-rich and tasty, and a healthier way to snack. 

Today's deviled eggs contain a bit of curry, and is a creative way to enjoy a classic.

Lunch

Whole Wheat Turkey and Cheese Sandwich

In Clean Eating, simple is best. And today's clean eating lunch was as simple as they come: organic roasted turkey breast from Applegate (that's antibiotic free and nitrite free), all-natural provolone, and whole wheat sandwich bread.

I passed on condiments today, but usually use a clean eating mayo like safflower oil mayo by Hain Pure Foods. It's as tasty as regular mayo but without junk.





Afternoon Snack

Fresh Strawberries and Blueberries

Summer officially ends this weekend, so I enjoyed the last of berry season.

Dinner

Five Spice Salmon (recipe here)

Five Spice is a traditional Asian spice mixture containing star anise, cloves, cinnamon, black pepper and fennel seeds. It's fragrant, flavorful, and one of Chinese cooking's favorite condiments.

Today's Five Spice Salmon dish was easy-to-make yet mouthwatering. It made a fantastic weeknight dinner recipe.

Coq Au Vin – Rock Out with Your Coq Out

Some recipes just shouldn’t be translated to English. It’s not that telling your guests they’re having “Cock with Wine,” sounds so bad, it’s just that after dinner I want them tweeting about how great the dish tasted, not how funny/inappropriate the name was.

 The other issue would be one of false advertising, since I have no idea where you get an old rooster these days. I like to use bone-in, skin-on chicken thighs instead, which I think work perfectly here. Like all braised dishes, tougher cuts with lots of connective tissue work best, and on a chicken that would be the thigh/leg section.

Of course, someone will ask if they can use chicken breasts, and technically you can, but please don’t. They just will not add that sticky goodness to the braising liquid that the thighs will.

This really is a simple recipe, and all gets done in one pan, but there are several steps, as you build up fond after fond. Before any wine or stock hits the pan, we want a thick, gorgeous layer of caramelization, which is where much of this recipe’s flavor comes from.

I don’t want to sound cocky, but this really was delicious, and as I say in the video, the mushroom, bacon, and onion mixture alone is worth making this for. I hope you give it a try soon. And please, use the French name. Enjoy!


Ingredients for 2 large portions:
8 oz sliced bacon
6 bone-in, skin-on chicken thighs
salt and pepper to taste
*note: after cooking bacon and browning chicken, discard all but 1 tbsp of the fat before cooking the vegetables
2 shallots, sliced
1/2 large yellow onion, diced (traditionally they use pearl onions)
10 large button mushrooms, quartered
2 tsp butter
2 tsp flour
1 1/2 cups red wine
1 cup chicken broth
6 springs thyme
- Braise for about 1 hour 375, or until the thighs are tender

Here's a clean eating tip: dates make a fantastic substitute for sugar.

Today's smoothie was deliciously sweet with California dates and organic almond milk. It was creamy, tasty and such a fresh idea.

Dinner

Lobster Topped Salad

Went with a light dinner tonight: scrumptious Langostino Lobster over crunchy salad. Then, a splash of all-natural grated Parmesan. Add dressing of your choice--hopefully you choose an organic dressing made with Greek yogurt--and dinner is served.
