Breakfast

What's so good about steel cut oats?

Well, besides the fact that it's low in caloric value (about 150 - 170 calories per 1/4 cup), it contains a variety of nutritious whole oat groats, and can be eaten alone or used in baking. Its healthy benefits make it a perfect clean eating food--and I love how it's versatile as well.

Today's clean eating breakfast was warm, hearty and slightly sweet! It was wonderful.

Mid Morning Snack

Baked Apple Slices with Blue Cheese, Dates and Pistachios (recipe here)

This snack contained a fusion of flavors: spicy blue cheese, juicy apple and sweet dates. Every bite exploded with taste. You should absolutely give this combination a try.

This tuna melt was full of flavor. Love tuna in the first place, but with spices, it was even better. Plus, it was quick to make.

You have no idea how easy this chicken recipe was to make. It took less than 30 minutes, and tasted wonderful! The chicken was tender, moist and full of herbs. You'll love this as a weeknight dinner idea.

I enjoyed my chicken over fresh salad. Of course, it would have been great with a side of steamed vegetables too.
