Breakfast
Baked Plantain with Nut Butter (recipe here)
Instead of bananas, I used plantain for today's clean eating breakfast.
Just like bananas, plantain is nutritious and filling. But it's bulkier in texture, and great for baking. It also goes well with nut butter.
I loved today's baked plantain, topped with creamy butter and nuts. Try it at Clean Eating Breakfast Recipe.
Mid Morning Snack
Goat Cheese and Almonds Stuffed in Peach Halves (get recipe here)
I'm totally taking advantage of summer's delicious fruits--and this includes peaches.
Love, love peaches! They're sweet, juicy and scrumptious. I usually eat them by themselves, but decided to add creamy goat cheese and crunchy almonds. It was DELICIOUS!

Lunch
Simple Garden Salad with Hard Boiled Eggs and Chicken, in Yogurt Dressing
Bolthouse Greek Yogurt Dressing is awesome! It tastes just as good as other brands, but has 1/2 the calories and fat. You should absolutely try it.
Today's clean eating lunch is as simple as they come--just a bowl of salad topped with eggs and chicken. I used Bolthouse Poppy seed Dressing, but of course, other flavors taste good as well.
Afternoon Snack
Fruits and Nuts
In my opinion, they are the best.
Dinner
Apricot Chicken (get recipe here)
Awesome clean eating recipe to try!
The chicken was tender. The sauce was sweet. Apricots added a unique citrus flavor. Plus, this stir fry dish was much healthier than the restaurant version.
